Don’t knock it ’til you try it!

So, I’m doing this nutritional program, right? Our weekly meetings include cooking demos. I’ve learned some pretty cool things during those demos.

For example, using julienned zucchini in place of pasta. Sounds odd, I know, but it works somehow. Basically you just peel zucchini (one to two per person) and then julienne it (you can buy a tool at the grocery store to make that easier). Then you just replace pasta with those strips – no need to cook it.

But my favorite so far has been this recipe for lime pudding:

  • 2 avocados
  • 2 bananas
  • 1 TBS lime zest
  • 6 TBS lime juice (I used about 8 TBS)
  • Honey to taste
  1. Put all of that in a blender or food processor and whip it together until is smooth and creamy
  2. Pop in the fridge until chilled

I’ll be honest, when a bowl of this was set before me for the first time, I turned to the woman next to me and said, “I don’t think I can put that in my mouth.” But I did and was unsure for the first two seconds. Then the lime flavor hit and I was hooked. I know it sounds odd, and it is, but this tastes amazing. Hey, don’t knock it ’til you try it!
