Pay attention meat eaters!

So, we tried out this new recipe last night and it was so amazing I wanted to share it with you guys.

We are fortunate enough to have both A/C and a whole-house fan. Between the two we’re able to keep our house at a pretty comfortable temperature on hot summer days. However, we really try to use the A/C as little as possible so we do all that we can to keep the house cool in other ways such as not using the oven a lot during the summer. But one can only grill so much! And salads do get boring at some point. So finding good crock-pot recipes is really helpful!

This recipe for Ropa Vieja with Cuban Style Rice made us so, so happy. If the idea of cauliflower “rice” makes you cringe, then just use regular cooked rice to make the Cuban rice. But trust me, the cauliflower “rice” is super good. And if you do use regular rice, I encourage you to make it Cuban style as the recipe suggests because it’s pretty amazing.

I did make some modifications to the recipe, which are:

  • I used WAY more spice. For the Ropa Vieja I used about 2 TBS of each spice.
  • Speaking of spices, I mixed half into the veggie/tomato mix and then put the other half on the chuck roast.
  • I also used WAY more garlic. I just used a bunch of chopped garlic and mixed it right in the veggie/tomato mix instead of sticking it in the chuck roast.
  • I just eyeballed it on the spices for the Cuban rice, but I can assure you that I used more than the recipe called for.

Anyway, I encourage you to try this out. It makes a ton, which is great for leftovers.
